Now, I get it. When most people think of fermented foods, they picture sauerkraut or kimchi—flavors that might take some getting used to. But what if I told you that you could start your fermentation journey with something familiar, something beloved by kids and adults alike?

Enter fermented ketchup!

This isn’t just any ketchup. It’s a probiotic-rich, gut-healing condiment that adds depth and complexity to your meals while delivering serious health benefits. Traditional store-bought ketchup is loaded with refined sugars, preservatives, and artificial ingredients—none of which serve your body. I stopped eating ketchup years ago when a friend of mine told me the conditions of the ketchup factory where he worked (yes - you can imagine what goes in there & it was enough for me to swear off most condiments forever!) So when I figured out how to make it from scratch using ingredients that I trust, I joyfully re-introduced it back into my home. (I typically make this in the summertime to take advantage of our home grown tomato harvest and make the tomato paste from scratch. I also use whey from our local raw dairy milk, but you can absolutely use an organic yogurt as well.) This homemade version is naturally preserved through fermentation, giving you a nutrient-dense alternative packed with beneficial bacteria.

Gut-Healing Fermented Ketchup Recipe

Ingredients:

  • 1 cup organic tomato paste (no additives or preservatives)

  • 2 tbsp raw apple cider vinegar (with the mother)

  • 1 tbsp raw honey or maple syrup

  • 1 tsp sea salt

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp smoked paprika (optional, for depth of flavor)

  • 2 tbsp whey (strained from yogurt) or 1 tbsp brine from a previous ferment

  • 1/4 cup filtered water (adjust as needed for consistency)

Instructions:

  1. In a mixing bowl, whisk together all ingredients except the whey or brine.

  2. Once combined, stir in the whey or brine. This introduces the beneficial bacteria that will kickstart the fermentation process.

  3. Transfer the mixture to a clean glass jar, leaving at least an inch of space at the top.

  4. Cover loosely with a lid or cheesecloth, allowing airflow but preventing contaminants from entering.

  5. Let it sit at room temperature for 3-5 days, depending on the temperature of your home. Stir once daily and taste-test after three days. You’ll notice a subtle tang develop, which means the probiotics are thriving!

  6. Once it reaches your desired level of fermentation, seal the jar and store it in the refrigerator. It will continue to develop in flavor and last for several months.
