This Homemade Whipped Coffee Creamer Has a Secret Ingredient That Keeps It Fluffy for Days
Have you ever seen someone spoon what looks like a soft, dreamy marshmallow into their coffee—only to watch it slowly melt into creamy perfection?
That cloud of deliciousness is not a marshmallow at all… it’s scoopable whipped cream (AKA “coffee fluff” or “whipped cream bombs”) and once you try it, you’ll never go back to store-bought coffee creamer again.
At Magnolia Hill Homestead, I’m all about slow living, from-scratch kitchen goodness, and creating simple luxuries that turn everyday moments into rituals. This homestead-style whipped cream is easy to make, beautiful to serve, and lasts in the fridge for several days—just waiting to top your morning brew or afternoon tea.
Let’s talk about how to make it, why it works, and how to personalize it for your lifestyle.
What Is Coffee Fluff?
Coffee Fluff, or Scoopable Whipped Cream is a stabilized whipped cream that holds its shape for several days in the refrigerator. It’s soft, fluffy, and spoonable—like a cross between mousse and a melted marshmallow. You store it in a glass jar, scoop it into hot drinks, and it slowly melts into a rich, creamy layer.
It’s the perfect blend of homestead practicality and luxurious indulgence. But what's the secret to holding that fluff? GELATIN!
Why You’ll Love This Creamer:
• Shelf life: Keeps for 4–5 days in the fridge.
• Simple ingredients: No additives or preservatives.
• Customizable: Add maple, vanilla, cinnamon, cocoa, or even adapt it to be dairy-free.
• Gorgeous in photos: Yes, you can totally make your morning coffee look like a Pinterest dream.
• Kid- and guest-approved: Who doesn’t want “coffee with a cloud” during a weekend brunch?
Scoopable Coffee Cream Cloud (Stabilized Whipped Cream Recipe)
Ingredients:
• 1 cup heavy whipping cream (cold)
• 1–2 tbsp powdered sugar or maple syrup (optional)
• 1 tsp vanilla extract (or any flavoring you love)
• 1 tsp unflavored gelatin (or agar agar for vegetarian/vegan version)
• 2 tbsp cold water
Instructions:
1. Bloom the gelatin:
In a small heatproof bowl, sprinkle 1 tsp gelatin over 2 tbsp cold water. Let it sit for 5 minutes to “bloom.”
2. Melt the gelatin (no microwave needed):
Place the bowl over a small saucepan of simmering water (double boiler-style). Stir until it turns into a clear liquid. Remove from heat and let it cool slightly.
3. Whip the cream:
In your KitchenAid mixer (or with a hand mixer), whip the heavy cream on medium speed until it begins to thicken. Add sweetener and vanilla.
4. Stabilize with gelatin:
Once soft peaks form, slowly drizzle in the cooled gelatin while whipping on medium. Then increase to high and whip until stiff peaks form.
5. Store and enjoy:
Transfer to a clean glass jar. It will stay fluffy and scoopable for up to 5 days in the fridge. Scoop it into hot drinks, onto desserts, or right onto a spoon.
Flavor Variations:
• Cinnamon Maple Cloud: Add ½ tsp cinnamon + maple syrup instead of powdered sugar.
• Mocha Dream Cream: Add 1 tsp cocoa powder + ¼ tsp instant espresso powder.
• Lavender-Vanilla: Steep dried culinary lavender in warm cream for 10 minutes before whipping.
Want a dairy-free version? Try using full-fat coconut cream and substitute agar agar for the gelatin!
